With more than 25 years of experience, Armando Jerónimo is the maestro mezcalero behind Xhigabaa. His understanding of the land and of traditional methods shapes its complex, singular profile.
Our ancestors taught us the virtue of patience. They showed us that everything has its time, that nature is wise and knows when to bear fruit.
That’s why we haven’t altered any of the processes involved in making our mezcal. We believe patience is a gift passed down through generations, and anyone who tastes our mezcal can feel it.
We don’t use pesticides, herbicides or fertilizers in the field. For eleven years we tend our agave every day.
When it reaches its peak, we bring it to our palenque, where it goes through a natural process of 45 days. No chemical substances are used in cooking, fermentation or distillation.
Xhigabaa is a robust, characterful and noble mezcal, with a gentle smokiness and aromas of coffee and vanilla. It captures the essence of everything we grow in this region of Oaxaca.
It pairs beautifully with many national and international dishes, but it reaches its highest expression with Oaxacan mole.

The greatest recognition I can receive is when someone tastes our mezcal, looks you in the eye and shakes your hand with a smile. It moves me to know that, through Xhigabaa, people everywhere can experience our culture.
