In Oaxaca, every Day of the Dead an altar is raised with candles, cempasúchil marigolds and whatever the departed most enjoyed in life. Mezcal is never missing: one glass is left for them and another is raised in their name.
On the nose it opens like a freshly set altar: ripe guava, tejocote, orange peel and sugarcane, woven into the wood smoke and damp earth of our Espadín. On the palate the fruit melts into smoke and honey, and it lingers long and warm, like an embrace that stays.

The small wild agave that grows among rocks in the shade of oak trees: the most delicate in the sierra.
On the nose it is floral and herbal: jasmine, pear, lemon peel and green agave. On the palate it is soft and silky, with honey, roasted sweet potato and fig, and a warm finish of nutmeg and pepper.
It ripens in the wild for more than a decade. A mezcal to sip slowly, the way you read a letter that took years to arrive.
