The Maestro
With more than 25 years of experience, Armando Jerónimo is the master craftsman behind the creation of Xhigabaa.

“Our ancestors taught us the virtue of patience.
They showed us that everything has its time, that nature is wise and knows when to bear fruit.
That’s why we haven’t altered any of the processes involved in the creation of our mezcal.
We believe that patience is a gift passed down through generations, and anyone who tastes our mezcal can feel it.”
A 100% organic mezcal
“Xhigabaa stands apart from other mezcals. We avoid using pesticides, herbicides, or fertilizers during cultivation.
For 11 years, we have been nurturing our agave daily in the field. When the agave reaches its peak maturity, we transfer it to our palenque, where it undergoes natural processing for 45 days.
No chemical substances are used in any phase of the process whether in cooking, fermentation, or distillation”.
The Maestro´s Tasting
“Xhigabaa is a robust, characterful, and noble mezcal.
It offers a slight smokiness, with aromas of coffee and vanilla, capturing the essence of everything we cultivate in this region of Oaxaca.

The greatest recognition I can receive as a maestro is the appreciation of those who taste our mezcal.
When someone greets you, tastes Xhigabaa, looks you in the eye, and shakes your hand with a smile that is the highest praise for my work and for everyone involved in producing our mezcal.
